Sourced from premium grapes in Washington state’s Columbia Valley.
Columbia Valley vineyards sit at a northerly latitude, similar to France’s renowned Champagne district, giving the region two additional hours of sunlight during the peak of the growing season. The ample sunshine and cool evenings create ideal conditions in developing superior flavor and crisp acid.
The delicate flavours of apples and citrus are balanced by subtle undertones of brioche and almonds that have developed during its 18 months spent maturing in the bottle.


Vinification: Each press cut underwent a primary fermentation that lasted roughly 2 - 3 weeks, and the individual lots were stored separately until blending decisions were made. Winemaker Rick Casqueiro sampled approximately 110 lots of base wines and eventually selected a cuvée based on aroma and acidity to create the ‘assemblage’. The ‘assemblage’ was then bottled with a small amount of ‘liqueur de tirage’ which triggered a second fermentation and the wine’s fine bubbles. This traditional method sparkling wine was aged ‘sur lie’ for up to 18 months and then a sweet liquid dosage was added to the bottle to balance the delicate, naturally high fruit acids and viscosity, giving this Brut its unique style. The final blend was composed of 63% Chardonnay, 19% Pinot Noir and 18% Pinot Gris.

Particularly good with sushi and sashimi.
